Umami food design that returns to the local nature, enjoying both vegetation and culture

Since 2012, d47 MUSEUM has been showcasing the individuality of 47 prefectures in Japan, through a variety of themes such as traditional crafts, creations of the younger generation, tourism and food culture.


 "LONG LIFE DESIGN" exhibition has been held irregularly as a series of exhibitions that consider the future of design. The first exhibition "Healthy Design" was held in 2018, and the second exhibition "Design for Prayer" was held in 2020. The third exhibition considers  long-life design of "food" through the local cuisine of 47 prefectures and their activities to promote their culture, with "Umami" as the keyword.


"Umami" originated in Japan and has now become a universal word. Therefore, we should not only refer to umami as a taste sensation, but should also include the background of its birth. This is the special exhibition to let visitors feel and learn the background of food  and culture in each region through 47 "Umami" related to each region's climate.

Local cuisine is the accumulation of the living wisdom of a region. For example, in order to survive in a closed environment with snow in the winter, preserved food that has been prepared from spring to summer is necessary. Various creative techniques such as drying, salting, and fermenting have supported people's lives in such areas. In fact, it can be said that it is precisely in this harsh environment that the strong spirit of appreciating the deliciousness and enjoyment of the ingredients, as well as striving to eat everything with no waste, was fostered.

Against this backdrop, we selected one local cuisine from each of the 47 prefectures that has evolved with the changing times and that is connected to each region's climate. And, we are exhibiting the story of the encounters that led to the creation of each, along with the activities that pass on that culture. By no means do we think that a single dish can fully describe the lifestyle of a region. We hope that, however, through this exhibition, people will become more interested in the area and have the opportunity to visit. By visiting a place and trying to imagine the food culture in one's own way, people are sure to go back and develop a new food culture in that place. We want to create a future where this world is filled with diverse food landscapes.

During the exhibition, the special menu "Umami Teishoku" will be available monthly at d47 Shokudo, where you can actually eat the local cuisine featured in the exhibition. In addition, "UMAMI Kaku-uchi Bar" and "d47 UMAMI Sake Bar" will be held at d47 Shokudo!
