Saitama prefecture's Sayama tea is cultivated in one of Japan's major production sites that is close to the northern limits for cultivation, and the sprouts must endure the cold climate while growing slowly, hence growing thick tea leaves that offer full flavor. And during the final stages of tea manufacturing, a strengthened firing process is applied (called "Sayama firing") to create a rich flavor. Characterized by a thick sweet flavor within the bitterness.
Okanoen
Located in Saitama, "Okanoen" opened in 1953 in front of Omiya Station. A tea shop that's youthfully redesigning Japanese tea from the consumers' perspective. It is also a "Sayama tea" cafe used by locals.
How to enjoy a delicious tea:
5g of tea leaves, 100cc of hot water.
Diffuse with 80C hot water for the first serving and let it settle for 60 seconds. Pour while making circular movements.
Sayama tea can be enjoyed 3 times using the same tea leaves. For the second and third servings, raise the temperature another 10C and let it settle for 30 seconds respectively. Pour with the same circular movements as before.
